I love the flavors of eggnog, even though I have had the imitation eggnog drinks more than the real thing…
This eggnog is thick and creamy, but not as overpoweringly rich and sweet as the real thing. The recipe can of course be adapted if you prefer that!
I asked my dad to taste test this and I was very surprised because he was drinking it so slowly and did not comment on how it tasted (and I obviously thought it tasted pretty good). Finally, he asked, “so… how many eggs are in here?” I laughed… None! Once I told him that there were no eggs in it he informed me that he loved it!
I made my eggnog without the added dates, but if you want it to taste more traditional, I would add the dates. Try it first without and you can always add!
Recipe: (serves 2)
- 1/2 c raw cashews (soaked if you do not have a high speed blender)
- 2 very ripe frozen bananas chopped
- 1/2 t cinnamon
- 1/2 t nutmeg
- pinch of cloves (optional)
- 1/2 t vanilla powder or alcohol free vanilla
- 1 T lucuma powder (optional)
- 1-2 dates (optional)
- 1 cup water
Blend all ingredients on high in a blender and serve immediately.
